Vegan Recipes

Introduction to becoming vegan

Hello and welcome! I've discovered veganism and I'm really enjoying it. I feel happier and healthier. Although finding the slight temptation of a sliver of cheesecake ... I overcome it and think, 'this is not what I want, despite my mind telling me so, this is not good for me or the animals'.
Veganism is not only important for your physical health, but mental. From personal experience I suffer with anxiety and depression; but since recent events of becoming vegan; I'm starting to find my true and happier self. I'm experiencing with rich and adventurous food, which I wouldn't do beforehand; I would happily reach out for a chocolate bar, but now I'm going head over heels for fruit! Grapes is my go to at the moment :)
I feel that putting healthy ingredients in my body makes me feel like a better person, I feel so much more alive, I'm wide awake and enjoying life! I'm mature enough and strong enough to take control of what I put into my body, as well as keeping the will power to stay strong and not give into temptation.
On this section of the blog, I will be posting my own vegan recipes :)
Becoming vegan is hard, but with my help and recipes you will still be able to enjoy the 'naughty treats', and you'll enjoy them even more because they are good for you!
Double win overall! :D

Hello! Hope you are having a good day, I know that I am, the weather in the UK has been beautiful over the last few days, and I thought that making a delicious cold smoothie would hit the spot and cool me down :).
If you would like to make this wonderful smoothie, look below and follow the few easy steps.

Ingredients:

  • One mango
  • One grapefruit (just the juice)
  • 10 strawberries
  • 500ml of almond milk (I use alpro almond original
When making this smoothie make sure that you have a strong blender, to make sure that everything blends together smoothly, and that you are getting the most out of your smoothie. I used the blend active smoothie maker, as it's really inexpensive, easy to use and does an amazing job when blending. This smoothie has no lumps! Which is perfect for me as some textures bother me.

STEPS ON HOW TO MAKE THIS:

  1. Wash the strawberries and mango and cut them to your desired shape or size, whatever is easiest for you, and for your blending machine. (You want to make sure that it all fits in the blender nicely);
  2. Place the mango and strawberries into the blender;
  3. Squeeze the juice out of the grapefruit and place into the blender;
  4. Add 500ml or the desired amount of almond milk, or even coconut milk to your soon to be smoothie;
  5. BLEND
  6. ENJOY! :D

Why these ingredients?

Mango:
Mango's contain a high amount of vitamin C, this is fantastic if you are feeling sick, or have a low immune system. This will fill you with enough energy to start the day and fade slowly, so yo aren't left feeling drained. As well as tasting extremely good, they are also filled with  vitamin A, this is great for your eyes and is a fantastic antioxidant.

Grapefruit:
Grapefruit is enriched with vitamin C, this helps support the immune system; with this pro, it will help fight cold symptoms and fill you with a great amount of energy; which is handy if you feel tired, or have a bad start to the day.

Strawberries:
Just like the previous fruits, strawberries have a high source of vitamin C, this really does help with boosting the immune system, this will make you feel happier and heather. As well as this, strawberries also have a high amount of phenolic flavonoid phyto-chemicals called anthocyanins and ellagic acid; this can prevent cancer.

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential im everyday life, you always need to repair yourself.

Hello!Another beautiful day in the UK, which means it's time for another blog post! :)
Since turning vegan I knew that giving up pasta was going to be extremely hard for me; but there is VEGAN pasta out there! It tastes just like regular pasta, it's faster to cook ,(always a bonus when you're really hungry) and better for you!
If you would like to make this delicious dish, look below and follow the easy steps.

Ingredients:

  • 100 grams (or base the measurements on how hungry you feel:
    Vegan pasta (I used freeform by Sainsbury's, it's: wheat, egg, milk and gluten free);
  • 1 tbs of pesto sauce (sacla italia is the brand I used)
  • parsley;
  • salt and pepper;
  • extra virgin olive oil
Keep in mind! When boiling the pasta it can go from hard to soft in seconds, so when you think it's nearly done keep checking to how you want your pasta. In my opinion I love pasta al dente :)/

STEPS ON HOW TO MAKE THIS:

  1. Fill a pan with 300ml of already boiling water, (this speeds up the cooking process);
  2. Put 100 grams (or how much your stomach is feeling) into the pan of boiling water;
  3. Add salt and pepper to the pasta and put a lid on the pan (stir occasionally); make sure you keep an eye on it because it takes 5-7 minutes to cook through until soft. The heat setting on the hob should go to 4;
  4. When the pasta is ready drain the water, place the pasta back into the pan and drizzle extra virgin olive oil, (This will stop it from sticking);
  5. Add the pesto sauce and stir
  6. Plate or bowl up, and then sprinkle parsley on top;
  7. ENJOY! :D

Why these ingredients?

Pesto:
Pesto is enriched with vitamins A and C, this helps boost your immune system, this will help fight infection, while keeping you fit and healthy. Whereas vitamin A is good is amazing for you eye health; it makes them stronger as well as being a great antioxidant.

Parsley:
Parsley has a huge amount of vitamin K, this helps builds bones and heals heart disease. in addition to this, parsley also has vitamin A, which as we already know is great for our eyes, and acts as a fantastic antioxidant.

If you want to keep up to date with that I do on a daily basis follow me on my social media above, and I'll be sure to follow you right back :).

Hello! Hope you are all doing well, I thought that it was about time to introduce you to my favourite vegan meal; this is what has saved me! It's super healthy and damn right delicious! I made this on the spot when I was super hungry, I thought that goes well with that; and just hoped for the best. It turned out great! :D
It's really simple and easy to make, if you would like to know this secret, look below and create :)

Ingredients

  • 50 grams peas
  • 25 grams sweetcorn
  • 1 garlic glove
  • 2 shallots
  • chili spices or one chili (whichever you prefer)
  • salt
  • pepper
  • 50 grams new potatoes (or whatever potatoes you want, I just picked these as they fit perfectly in my on-the-go tub)
  • Sabra roasted pepper hummus
  • chili sauce
  • Extra virgin olive oil
(You can make your own chili sauce and hummus, but I wanted to show you the simple way first, we don't want to make it too complicated yet) :)

With the measurements you don't have to stick to this exact amount, go by what your body is telling you :)

STEPS ON HOW TO MAKE THIS:

  1. Boil 300ml of water and place in pan;
  2. Put your potatoes in the pan and use the salt and pepper to season the water, (this leaves a subtle but nice flavour on the potatoes);
  3. Prepare you shallot and garlic, cut them up to the size you want;
  4. In a small pan, put boiling water in and place the peas and sweetcorn in there;
  5. Combine the garlic and shallots to the pea and sweetcorn mixture; add the extra virgin olive oil; chili spices, salt and pepper and stir;
  6. Place the vegetables into your desired container;
  7. Take out your potatoes and poke them with a folk, (they should be soft); drizzle the oil over them and shake in pan;
  8. Add the potatoes to the vegetables in your desired container;
  9.  Put the hummus and chili sauce on the side for dipping and flavour;
  10. ENJOY!

Why these ingredients?

Peas:
Peas are filled with Vitamin C, this helps build the immune system and makes it stronger over time, this will prevent you from feeling ill. As well as this, peas are also filled with B6, this will stimulate co-enzymatic activities, this entails protecting the immune system and having great effects on the metabolism, (speed it up).

Garlic:
Depending on how we prepare our garlic depends on how much nutrients we get out of it; this is why I have suggested either: cutting or crushing. This increases the enzymes within the garlic, these enzymes can prevent cancer.

Shallot:
Shallots is a great antioxidant, they also contain low fat saturation, this won't clog up your arteries, as it reduces cholesterol, in comparison to a normal red or green onion, this is so much better for your mental and physical health.

Thank you for reading this post, hope you enjoy and recreate, stay tuned little ones :) x x x

Good afternoon! Hope you are all well and enjoying your day :), I've whipped up another quick and easy recipe, I really hope you enjoy! You can use any fruit you like, but always used banana for the binding agency; if you use any other fruit it won't stick together.
If you want to know how to make these really healthy treats, look below and create :)

Ingredients

  • One banana;
  • 70 grams of pure oats, I used the ones from Freefrom;
  • 25 grams of Raspberries (or any choice of fruit you want)

STEPS ON HOW TO MAKE THIS:

  1. Preheat your oven to 180 degrees;
  2.  Cut up your banana and place into a medium sized bowl;
  3. Take half of your oats and place into the same bowl as the banana;
  4. Take a folk and start mashing the banana and oats together;
  5. When the banana and oats are nearly formed together, add the remaining oats;
  6. Add the raspberries (or chosen fruit) to the mixture and stir gently, you don't want to break the raspberries;
  7. Put grease proof paper on a baking tray;
  8. Take your cookie mixture, make single balls, grab a folk and push on them to make cookie shapes;
  9. Put the cookies in the oven and bake for 20 minutes (make sure that you can pick them up without breaking them;
  10. ENJOY! :D

Why these ingredients?

Banana:
Banana's are enriched with potassium, this helps towards repair: tissue, cells and organs in the human body; this makes you feel energised and awake; this means that you don't need that coffee in the morning ;)
Alongside this, they are low in fat, (4% of their calorie intake is fat); this is great if you are on a diet and need to loose weight.

Raspberry:
Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.

Oats:
Oats is a long lasting food, this means that it feels you up at that moment in time, and slowly releases throughout the day; this meaning that you won't feel as hungry throughout the day. On the other hand, it's low in saturated fat; which means it will lower your cholesterol level; this means a healthier heart; due to the arteries not being clogged.

Thank you for reading this post, hope you enjoy and recreate, I would love to see what you make. Show me on my social media platforms.
Stay tuned Little ones :) x x x

Hello Little ones! Hope you are well and having a good day, I have another smoothie recipe for you! I hope you enjoy it; this is the perfect start of the day meal; if you are in a rush you can drink this on the go and still feel full and energised :).
If you want to make this yummy smoothie look at the simple steps down below :).

Ingredients:

  • 1 banana;
  • 5 strawberries;
  • 25grams oats;
  • 50grams alpro almond milk
These are just the measurements I used to make a small smoothie, it filled half of the 600 ml bottle. You can double the ingredients if you want to; this is just what I wanted to do. Also a tip when blending, make sure you blend for 2-3 minutes for a smooth texture; because the oats are hard you want to make sure that they are smooth at the end. If you like bits in your drink, or don't mind textures then you don't have to do this:).

STEPS ON HOW TO MAKE THIS:

  1. Cut up your strawberries and banana and place them in the blender;
  2. pour the oats into the blender slowly (so that you don't make a mess);
  3. slowly pour the almond milk into the blender;
  4. BLEND;
  5. optional step: scatter oats onto your smoothie for extra crunch;
  6. ENJOY! :D

Why these ingredients?

Banana:
Banana's are filled with potassium, this mineral helps function and repair: cells, tissue and muscle within the body. It also makes you feel more energised by sending electrolyte (an element which sends electricity around the body); along with sodium etc.

Strawberries:
A strawberry is an excellent antioxidant, this means that they are the first call when it comes to fighting diseases in the body; they also prevent causing other damage to other cells. Strawberries also donate electrons to unstable free radicals. This means that they don't have to take electrons from innocent cells.

Oats:
Oats have a slow release level of energy, this means that you can have these for breakfast and last a long time without food. This is handy if you are on a diet and want to loose weight; as you won't get hungry as often throughout the day.

Good afternoon! Change of plans, but I thought that I would give you another vegan recipe! I love experimenting with different fruits; and I'm always in the mood for a good old smoothie! So I decided to share my creation with you!
I hope you enjoy this as much as I did! If you want to know how to make this, have a little look below and enjoy! :D

If you want to see another vegan recipe, click here!

Ingredients:

  • 1 watermelon;
  • 25ml orange juice;
  • 25 grams vegan yogurt, (I used alpro raspberry).

STEPS ON HOW TO MAKE THIS:

  1. Prepare your fruit: cut the watermelon in half, and half again; this makes quarters, ( as shown in the pictures above). After you have done this, slice the quarters so that they are in strips. Cut around the melon and the skin so you are left with the red flesh. Cut these into cubes;
  2. put the watermelon into the blender and add the orange and the yogurt;
  3. blend for a few seconds, because watermelon is a water based fruit the smoothie won't be lumpy;
  4. ENJOY! :D

Why these ingredients?

Watermelon:
Watermelon's are filled with vitamins A, B6 and C, and is also an amazing antioxidant. Vitamin C is amazing for the skin, it replenishes the several layers of skin, as well as keeping it hydrated and firm. Vitamin C is common in skin care brands, as it has a multitude of benefits for the skin. As well as this, watermelon also fights infections and builds the immune system.

Orange:
Oranges are an excellent source of vitamin C. They are also a very good source of dietary fiber. Just like the watermelon, oranges are great for the skin. When I make a facial mask oranges are my go to ingredient; not only do they smell great; but they feel fantastic on the skin; it makes me feel awake.

I hope your day has been amazing so far, and if not, then make it great! I know that I will hopefully be posting another blog post this evening; but I will be heading to my boyfriend's for dinner :).
You will hear from me soon though! Stay tuned Little ones :) x x x

Blueberry and blackberry vegan pancakes

GOOD MORNING! I've had a great couple of days talking to some of you! My Twitter has been blowing up, I'm so delighted and overwhelmed with joy that you are taking time out of your day to not only read my posts; but to talk to me as well! I know today is meant to be my day off; but I couldn't not share this!
I hope you enjoy making these as much as I did! If you want to find out how I made these bundles of joy, have a quick read down below :)

If you want to see another vegan recipe, click here!

Ingredients:

  • 100 grams self-raising flour;
  • 100 ml almond milk;
  • 10 grams blueberries;
  • 10 grams blackberries;
  • 2tbs olive oil
  • salt;
  • golden syrup (optional).

STEPS ON HOW TO MAKE THIS:

  1. Put your pan on a low heat (setting 2-3); this ensures that when you've made the batter the pan would heat up enough. You don't want a high setting as it will burn the surface and leave the inside raw;
  2. sift the flour into a bowl and add a sprinkle of salt;
  3. pour in the almond milk and mixed till combined;
  4. add the oil and mix until the mixture is elastic;
  5. add the blackberries and blueberries, take a fork and crush them into the mixture; this method ensures that you will have tiny blueberry and blackberry pieces in your pancake;
  6. spoon in a small or large amount of mixture (depends how big you want your pancakes); and place them into the center of the pan;
  7. put a tiny amount of oil on the pan before hand, don't want them to stick;
  8. cook one side for two minutes, flip over and cook the other side for two minutes;
  9. repeat this process until you have no mixture left;
  10. put your extra toppings on the side, this would be the extra fruit and golden syrup for me;
  11. ENJOY! :D

Why these ingredients?

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Blueberries:
The blueberry's fiber, potassium, folate, and vitamin C coupled with its lack of cholesterol, all support heart health. The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease this is perfect if heart disease runs in the family.

Blackberries:

Much like spinach, raisins, apples, plums and grapes, blackberries are rich in bioflavonoids and Vitamin C. This is perfect for the skin, it replaces new cells, as well as keeping the skin firm and soft.

Thank you for reading this post! I really hope you enjoyed these delicious treats! I know I did! Since becoming vegan this has helped me so much! Fruit helps with the sweetness, but these pancakes help the cake side :')

I would love to see your recreations! Please keep talking to me on social media! It really makes my day! Or even comment below! I will respond however you want :)
I love you all! Have a lovely day, and I will see you again later :)

If you want to know how to make this super tasty meal look below and have a gander :)

Ingredients:

  • 1 onion;
  • 1 garlic clove;
  • tomato base sauce;
  • 3 carrots;
  • 125 grams spinach;
  • extra virgin olive oil;
  • salt and pepper;
  • 6 lasagna pasta sheets, (I used FreeFrom, you don't have to cook these ones in water).
P.S you just place the FreeFrom lasagna sheets like you would when making a lasagna, you don't cook these beforehand. They cook when they are in the oven.

STEPS ON HOW TO MAKE THIS:

  1. Prepare your vegetables: wash the spinach and place it in a bowl, cut the onion and dice into small pieces, do the same with the garlic. Chop the carrots into tiny circles and place to one side with the rest of the vegetables;
  2. get a small pan and place the carrots in already boiling water (boil the water in a kettle and place in the pan), cook for 15 minutes of gas mark 4;
  3. preheat the oven to 200;
  4. while the carrots are cooking mix the onion, garlic, salt pepper and extra virgin olive oil in a bowl;
  5. when the carrots are cooked, put them in a bowl. Put the onion and garlic mixture into a pan; cook until the onion is golden and the spinach has reduced;
  6. when the vegetables have cooked, drain the mixture and put into a bowl;
  7. put the first 2 lasagna sheets in your desired cooking tin; layer the tomato sauce on top and place the carrots and spinach mixture on top. Then layer another 2 lasagna sheets;
  8. repeat this process until the carrots and spinach mixture is finished; top the final layer with tomato sauce;
  9. put kitchen foil over the lasagna and cook for 30-40 minutes;
  10. plate your dish and enjoy! :D

Why these ingredients?

Spinach:
Spinach is high in fiber, antioxidants and strengthens the immune system. Spinach is perfect if you suffer with constipation, I know that I used to. Since eating spinach I haven't had any trouble with my bowls, apart from the fact that I suffer with IBS.
Also because spinach helps build the immune system, it means that when the colder months settle in; you are already fit and healthy enough to fight all those nasty infections and colds.

Carrots:
This root vegetable is also a good source of antioxidant agents. Furthermore, carrots are rich in vitamin A, Vitamin C. Vitamin C is perfect for the skin, this is what makes the skin glow, as well as repairing cells and making it firmer.

Garlic:
Depending on how we prepare our garlic depends on how much nutrients we get out of it; this is why I have suggested either: cutting or crushing. This increases the enzymes within the garlic, these enzymes can prevent cancer.

Onion:
Onions are a great antioxidant, they also contain low fat saturation, this won't clog up your arteries, as it reduces cholesterol, in comparison to a normal red or green onion, this is so much better for your mental and physical health.

Welcome again Little ones! How are you today? I feel the autumn hitting, the leaves are turning and I love it. I've been having a relaxing day today, it was also my Mothers Birthday! She was ever so happy with what I bought her :). Other than spending time with her I thought that it was about time to experiment in the kitchen and make another vegan recipe! So here it is ladies and gents! Get in that kitchen and start cooking!

INGREDIENTS:

  • 200 grams self-raising flour;
  • salt;
  • 50 grams caster sugar;
  • 50 grams coconut oil (put in the fridge before use, this is your butter subsistence);
  • 15ml almond milk;
  • 25 grams frozen raspberries.

STEPS ON HOW TO MAKE THIS:

  1. Preheat the oven to 180 degrees;
  2. prepare baking tray: brush on vegetable oil onto a baking pan and place over grease-proof paper, this is where you will place your cakes later;
  3. Sift the flour and pinch of salt into a large bowl;
  4. take the coconut oil out of the fridge, this should be solid enough to place into the flour, you should then rub the flour and coconut oil together until it forms fine breadcrumbs;
  5. put the caster sugar into the flour mixture and mix until well combined;
  6. put in the raspberries and mix until well combined, there should be a raspberry in every bite of the rock-cake;
  7. pour in the almond milk, stir until all the cake batter has joined together;
  8. take some of the mixture into your hands and place onto the baking sheet you prepared earlier. Make a circle, but do it imperfectly (as shown in the first picture), this makes it more authentic;
  9. repeat stage 8 until all the mixture has been used up;
  10. put into the oven for 15 minutes, you know they are done when the edges are golden brown;
  11. put onto a plate and ENJOY! :D

WHY THESE INGREDIENTS?

Raspberry:
Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Coconut oil:
Coconut oil high in natural saturated fats. Saturated fats not only increase the healthy cholesterol (known as HDL) in your body, but also help to convert the LDL “bad” cholesterol into good cholesterols. So if you are on a high fat diet, try coconut oil instead, it will benefit your heart at the end of the day.

Ok Little ones! This is the time where I depart, but don't you worry I will be back later on with something new! Sounds exciting right?! I will be introducing a new segment to my blog entirely; find out later on by following my social media! :D

Good afternoon Little ones! How are you today? I've had no lectures, but I have been very productive! I've cleaned the apparent, gone shopping, planned future blog posts; and also bought the very ingredients for this blog post :). But I still have to do some more research for my first assignment; which is going very well, I'm aiming for an A and I think it's going that way! Any how, I thought that it would be great to show you some drink recipes! It's something I haven't done in a while; and I really miss making them! So here it is, get ready and have some fun!

Ingredients:

  • One entire bottle of elderflour (you can use flat or sparkling, it depends on what you want); I went with sparkling because my boyfriend adores fizzy drinks; especially when something sweet is involved;
  • 50 grams raspberries, (frozen or fresh), I went with frozen because I wanted something cold and refreshing;
  • 2 clementines;
  • ice cubes (optional).

STEPS ON HOW TO MAKE THIS:

  1. Prepare your fruit: peel  the oranges and cut them into cubes, put the correct amount of raspberries to one side, as well as the ice cubes;
  2. choose your required blender, I used the blendactive blender by Breville, I think it's fantastic, easy to use and easy to clean- if you want to see my review click here;
  3. put the fruit. ice and elderflower liquid into the blender;
  4. BLEND!
  5. Take it on the go or put them into glasses, and ENJJOY! :D

WHY THESE INGREDIENTS?

Raspberry:
Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.

Clementines:
Clementines are juicy delights rich in variety of vital nutrients including minerals such ascalciummagnesiumpotassium. This is fantastic brain food, and also makes you feel awake. This is the perfect fruit in the morning, as it gives you enough energy to start the day.

Little ones, I'm sorry to say that this is the end of the blog post, but fear not! I will be back tomorrow with a fantastic review, stay tuned if you are interested. I hope you have had a lovely day, I know that I've had a really productive day; which makes one of my favourites. I love you all so very much! Remember I am only a message away if you want to talk to me or ask me anything; I will answer the best that I can :).
Stay safe and stay tuned Little ones :) x x x

Good morning Little ones! Long time so see on the vegan recipes! I'm back in action and creating so much more! It's autumn, and what's better to eat this time of year than steamy mash potato. Normally I would have gem-potatoes, simply because that's all I've ever had. I've never actually tried sweet potato mash; which shocks me as I love sweet potato.
Enough rambling, if you want to make this concoction then follow the simple instructions down below:).

Ingredients:

  • 3 sweet potatoes;
  • vegan cream (Alpro);
  • 1 birds-eye chilli-VERY HOT be warned;
  • 2 spring onions;
  • 2 carrots.

STEPS ON HOW TO MAKE THIS:

  1. Prepare you vegetables: peel the carrots and potatoes. Chop the carrots into fine chunks and place them into a large pan, do the same with the sweet potato.
    Dice the chilli and spring onion and put to one side;
  2. Put 2lts of water into the kettle and wait until boiled. Once boiled pour the water into the large pan, in which the carrots and potatoes are;
  3. Leave to cook for 20 minutes (until soft);
  4. When the carrots and potatoes are done mash them with a folk until fully combined.
  5. Add the Alpro cream and stir together. Once combined add the chilli and spring onion and stir again.
  6. Plate up and ENJOY! :D

WHY THESE INGREDIENTS?

Spring onion:

Carrots:
This root vegetable is also a good source of antioxidant agents. Which simply means that they are detoxing your body, and making sure that bad bacteria stays away.

Sweet potato:
Sweet potato is enriched with beta-carotene. In the body, beta-carotene converts into vitamin A (retinol). We need vitamin A for good vision and eye health, for a strong immune system, and for healthy skin and

This is now the end of the blog post! I hope you enjoy this tasty snack/meal. Eat it with whatever you want, I love it alone as an afternoon stack; especially when it's cold outside. I can place this into a bowl, get all snuggled in bed and eat :).
I hope you are all happy and healthy, I'm going out to London again today, and also getting my hair dyed! I can't wait to show you! Stay tuned and stay safe Little ones! I love you! x x x
