TIPS BEFORE BAKING:
The recipe book I was following was excellent, but I felt there were some simple tips that could've been added, just to make the baking experience even easier. For instance, it states that you mix all the ingredients at the same time ... Please don't do this. I find it a lot easier if you mix all the wet ingredients, and then add the dry ingredients. First and foremost, mix the sugar and butter together, that way when you add the other wet ingredients; it's easier to combine. Just a little tip.

INGREDIENTS:
- 1 orange,
- 150 grams butter (soft)
- 150 grams light mascovado sugar
- 175 grams grated carrot
- 2 large eggs,
- 200 grams self-raising flour,
- 1 tsp baker powder,
- Half tsp ground mixed spice
- Honey (OPTIONAL)

METHOD:
- Preheat your oven to 180 degrees fan, or 160 degrees gas.
- Prepare the loaf tin-lightly butter the inside and place grease proof paper on top,
- Prepare your fruit and vegetable. Grate the orange peel and place to one side, then cut the orange into segments and diminish the pith.
Only grate the carrot and place to one side.
- Add the butter and sugar into a large bowl and cream together until fully combined, add the other wet increments: carrot, orange peel, eggs, mix until fully combined.
- Add the dry ingredients: flour, mixed spice, baking powder and fold in until combined.
- Place the mixture into the loaf tin and bake for an hour,
- Take the cake out of the oven, place the orange segments on top, and glaze honey on top of the orange (OPTIONAL), and place back into the oven for 5 more minutes.
- After the 5 minutes is up, let the cake cool for 30 minutes and enjoy with your favourite cream or custard!

Meringue isn't simple. Please get this into your mind beforehand, it takes a while to perfect, and a LOT of patience. You may be thinking, 'but it's only eggs' ... Yes you are right, but if you want the PERFECT meringue, you need to ensure that the egg whites are completely separate and that NOTHING is touching them, otherwise when you go to whisk, it won't hold.
You also need to expect that you need to be patient, time is key ... Depending on the size you are going for, it's going to take a LONG time in the oven. And it doesn't stop there, you need to let them cool for around 30 minutes; believe me, if you take them off straight away, the bottom will tear right off, and ruin your pudding.

- Separate the egg whites, place them in a large bowl and whisk until foamy,

- Place the bowl over a large pan of slightly simmered water, keep whisking until tough peaks form,
- (OPTIONAL) add the vanilla extract,
- Place your egg white mixture in the piping bags, and start piping your meringue mountains onto the trays, (TIP-start in the middle and slowly make your way up to the tip, the slower you go the bigger your meringue mountain will be),
- Place in the oven and bake for 35-45 minutes,
- (OPTIONAL) prepare your topping, heat the red current jelly in a small pan until runny, chop how many strawberry's you wish, and place them to the side,
- Let the meringue cool for 30 minutes and decorate,
- EAT!

Good morning you lovely people! How was your day yesterday? I had a gorgeous meal with my man last night, I was also meant to post this yesterday but I was so tired due to my lectures; I just wanted to hit the hay. Any how, what are you up to today? I don't have another lecture until 2 this afternoon! I can relax until then :).
I thought that it was about time to introduce something new to my blog, so here it is! Non-vegan recipes, I will post these throughout the week, I want to reach a wider target audience; and if that means bringing non-vegan meals into the equation then so be it :).

BEHIND THE SCENES:
Fundamentally, the story behind this meal wasn't as romantic as it portrays. Me and my other half were so stressed, due to work and our own personal life; that toppled on moving in; it just got too much. We wanted our own time together, in which we have finally obtained. We created this meal to celebrate our new chapter together; in which I was so happy and he was too. We finally have our own home; it feels amazing to share a home with my Christopher :).
As shown in the pictures above the meal wasn't vegan, Chris didn't want an entire vegan meal, which I can completely understand ; I'm not going to make him change his diet because of me; that would be so unfair. So I ate the meal with him, I'm still vegan but I'm not entirely strict about turning other people vegan; if they want to do it then so be it; but I'm not going to kick up a fuss. Especially in this circumstance, Chris wanted to have a non-vegan meal, so I agreed to let that happen; it's not a moment of weakness; it's being respectful to the people I love.
In addition to this, I was thinking about my non-vegan friends, and they wanted me to post non-vegan recipes, so that they can recreate what I do on the internet, so here I am, giving what the people want :).
INGREDIENTS:
- 100 grams gluten free pasta (I have to eat this pasta because gluten makes my tummy angry);
- 50 grams spinach;
- 50ml single cream;
- 50 grams parmesan cheese;
- 1 chili;
- 2 chicken breast;
- olive oil (for the frying pan);
- salt
STEPS ON HOW TO MAKE THIS;
- Pour 500ml of boiled water into a pan, add a pitch on salt and stir;
- put the pasta into the pan and put the lid in-top. Then turn the power onto a low simmer (1-2), cook for 8-10 minutes;
- when the pasta is cooking prepare the chicken. Cut the chicken breast into fine chunks, this will make it cook faster.
- put oil in a frying pan and turn the heat to number 5, wait until it's boiling hot. When the pan has reached the correct temperature throw the chicken chunks in;
- drain the pasta and add the single cream, when the creamy concoction is steaming and boiling add all the spinach until it wilts (this will take around 5 minutes);
- add the already cooked chicken from earlier and stir well;
- add the parmesan and stir until there is cheese everywhere;
- plate up and add extra cheese on top (if you want);
- ENJOY!:D
WHY THESE INGREDIENTS:
Spinach:
Abundant flavonoids in spinach act as antioxidants to keep cholesterol from oxidizing and protect your body from free radicals, particularly in the colon. The folate in spinach is good for your healthy cardiovascular system, and magnesium helps lower high blood pressure.
Chicken:
Chicken as we all know contains an mass amount of protein, this repairs your muscles and insures that they won't rip or pull. This is crucial in your diet if you do weight-training or any form of sports. In a way I had to have chicken yesterday, since I'm now back in the gym.

But I still have to do some more research for my first assignment; which is going very well, I'm aiming for an A and I think it's going that way! Any how, I thought that it would be great to show you some drink recipes! It's something I haven't done in a while; and I really miss making them! So here it is, get ready and have some fun!

Ingredients:
- One entire bottle of elderflour (you can use flat or sparkling, it depends on what you want); I went with sparkling because my boyfriend adores fizzy drinks; especially when something sweet is involved;
- 50 grams raspberries, (frozen or fresh), I went with frozen because I wanted something cold and refreshing;
- 2 clementines;
- ice cubes (optional).
STEPS ON HOW TO MAKE THIS:
- Prepare your fruit: peel the oranges and cut them into cubes, put the correct amount of raspberries to one side, as well as the ice cubes;
- choose your required blender, I used the blendactive blender by Breville, I think it's fantastic, easy to use and easy to clean- if you want to see my review click here;
- put the fruit. ice and elderflower liquid into the blender;
- BLEND!
- Take it on the go or put them into glasses, and ENJJOY! :D

Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.
Clementines:
Clementines are juicy delights rich in variety of vital nutrients including minerals such ascalcium, magnesium, potassium. This is fantastic brain food, and also makes you feel awake. This is the perfect fruit in the morning, as it gives you enough energy to start the day.

Good evening Little ones! How have you been today? I've been doing University work, damn I've just finished it all! I've now just found the time to sit down and write this blog post:).
I still can't believe how fast this day has gone! A lot of work and power naps with my boyfriend, nothing better than that. Any how, I made this concoction yesterday and I loved it! I also made it again because Chris wanted to try it, and just as I thought he loved it also :).

Fundamentally when you make this you can make your own sour cream and chive sauce, or you can buy it from the shops. I have tried both methods, both just as great; but if you are in a rush or don't really care then just buy the sauces from the shop :).
Ingredients:
- 3 eggs (or as many your stomach is telling you to eat);
- butter or cream (optional);
- sour cream and chive dip;
- spicy sauce (if you fancy some heat);
- 10 grams cheese.
STEPS ON HOW TO MAKE THIS:
- Take a medium pan and put some butter in there, let it melt slowly on a low medium heat;
- crack your eggs into a bowl and whisk, add salt and pepper and mix until combined;
- when the butter is melted put the eggs into the pan and stir, turn the heat up to gas mark 4; keep stirring as you don't want the eggs sticking to the bottom;
- when the eggs start forming bash them with a wooden spoon, as you want them to be separate and not a clump;
- when the eggs are cooked to your perfection add the sour cream and chive sauce, stir until combined;
- (optional) add in the chilli sauce with the sour cream sauce for some additional heat;
- place your scrambled eggs into a bowl. put some bread in the toaster and ENJOY! :D
Why these ingredients?
Eggs:
Eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk.

Good afternoon Little ones! How have you been? I'm terribly sorry that I've been away, personal life has been hectic; but I'm back again! I'm going to be writing a few more blog posts today as I've missed you guys so much. In regards to this recipe it came to mind when I was super hungry; I needed a quick fix, I looked at what I had in the fridge and BOOM dinner was made. If you are a University student then this is music to your ears. I know how busy you lot are, I'm just here to help you out :).

Ingredients:
- 50 grams pasta (I ran out of fusilli so I had to use some spaghetti as well), doesn't really matter as long as it's pasta;
- 3 tbs mayonnaise;
- 1 chilli;
- 15 grams mozzarella;
- 1 chicken leg precooked.
STEPS ON HOW TO MAKE THIS:
- Boil 500ml water and place into a medium or large pan, add the pasta and stir, cook for 10 minutes (I love my pasta al dente);
- when the pasta has cooked drain it and put pack into the pan;
- add the mayonnaise, chilli and chicken and stir until fully combined;
- put the pan back on the heat and finally add the cheese, stop stirring until the cheese is stringy;
- plate up and ... ENJOY! :D
WHY THESE INGREDIENTS?
Chicken:
Chicken as we all know contains an mass amount of protein, this repairs your muscles and insures that they won't rip or pull. This is crucial in your diet if you do weight-training or any form of sports.

Good Morning Little ones! What are your plans for today? My bestfriend is coming over-can't wait to see her! Also running into town to get a few bits and pieces, then I need to double check if my glasses have arrived; because I can't see properly; I'm surprised I've been able to write clear blog posts.

Ingredients:
- 100 grams egg noodles;
- 1 red pepper;
- 1 squash;
- 1 precooked chicken leg;
- 3 plums;
- soy-sauce;
- oil.
STEPS ON HOW TO MAKE THIS:
- Making the sauce: cut and skin the plums and put them into a blender, add the soy-sauce and blend, then put to one side.
- Prepare your vegetables: cut the pepper into fine strips, and the squash into little squares; this way it cooks faster.
- Put oil into a pan and place the vegetables in there, wait until they are soft and then add the chicken;
- after 3 minutes add the egg noodles and homemade plum sauce until steaming hot;
- Plate up and enjoy! :D

Red bell peppers contain several phytochemicals and carotenoids, particularly beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits. This strengths your immune system and helps fight infection due to the phytochemicals.
