Rice and roasted vegetables
Good morning lovely people! I came back from work yesterday and I needed food ASAP! I was super hungry, but I wanted something different from pasta. I quickly put this together and was VERY happy with the result.

Ingredients:
- 3 peppers (red, green, orange or yellow), whichever you prefer;
- 1 whole garlic;
- 2 onions;
- 1 chili;
- 50 grams rice, (this can be brown or white);
- chili sauce (optional);
- salt and pepper;
- olive oil.
STEPS ON HOW TO MAKE THIS:
- Preheat your oven to 180;
- prepare your vegetables. Cut the: peppers into strips, and then quarter the onion and garlic. Finally slice up your chili (keep the seeds for extra heat);
- set your hob to number 4 and place the rice in a pot with already boiling water;
- after the rice has come to the boil, put a lid over it and leave to simmer, (change the temperature to 1-2), leave to cook for 10-15 minutes;
- put the vegetables on a baking tray with olive oil and sprinkle salt and pepper; place in oven and leave to cook for 20 minutes;
- drain the rice and leave to sit for 5 minutes, this releases the starch;
- put the rice on a plate and take the vegetables out of the oven, put the vegetables on top of the rice;
- put chili sauce over the top, (optional);
- ENJOY!:D
Why these ingredients:
Garlic:
Depending on how we prepare our garlic depends on how much nutrients we get out of it; this is why I have suggested either: cutting or crushing. This increases the enzymes within the garlic, these enzymes can prevent cancer.
Onion:
Onions are a great antioxidant, they also contain low fat saturation, this won't clog up your arteries, as it reduces cholesterol, in comparison to a normal red or green onion, this is so much better for your mental and physical health.
Brown rice:
Brown rice is a great carbohydrate, it's a long lasting food and helps you fight hunger throughout the day. It would be advisable to have this at lunch or even breakfast time, as it will give you the engery to last throughout the day. It also makes you fill full up, which is great if you are on a diet as you won't need to snack as often.
