Good afternoon Little Ones! How are you all? I'm back again with another baking blog post! I was planning on doing a product review; but seeing that I wanted to bake, that's what I did instead! But don't worry! Product reviews are coming next week!
I didn't want to bake something that was plain and simple, let's be real here; that's not how I roll! Many of you will know that by now, but for my new fans, I'm not the typical blogger, have a scroll through my older blog posts! Anyhow, off topic, let's get baking! That's why your here right?






TIPS BEFORE BAKING:

The recipe book I was following was excellent, but I felt there were some simple tips that could've been added, just to make the baking experience even easier. For instance, it states that you mix all the ingredients at the same time ... Please don't do this. I find it a lot easier if you mix all the wet ingredients, and then add the dry ingredients. First and foremost, mix the sugar and butter together, that way when you add the other wet ingredients; it's easier to combine. Just a little tip.





EQUIPMENT:

  • Wooden spoon,
  • Large bowl,
  • Medium bowl,
  • Sieve,
  • 2lb loaf tin
  • Grease-proof paper.

INGREDIENTS:

  • 1 orange,
  • 150 grams butter (soft)
  • 150 grams light mascovado sugar 
  • 175 grams grated carrot
  • 2 large eggs,
  • 200 grams self-raising flour,
  • 1 tsp baker powder,
  • Half tsp ground mixed spice
  • Honey (OPTIONAL)

METHOD:

  1. Preheat your oven to 180 degrees fan, or 160 degrees gas. 
  2. Prepare the loaf tin-lightly butter the inside and place grease proof paper on top,
  3. Prepare your fruit and vegetable. Grate the orange peel and place to one side, then cut the orange into segments and diminish the pith.
    Only grate the carrot and place to one side.
  4. Add the butter and sugar into a large bowl and cream together until fully combined, add the other wet increments: carrot, orange peel, eggs, mix until fully combined.
  5. Add the dry ingredients: flour, mixed spice, baking powder and fold in until combined.
  6. Place the mixture into the loaf tin and bake for an hour,
  7. Take the cake out of the oven, place the orange segments on top, and glaze honey on top of the orange (OPTIONAL), and place back into the oven for 5 more minutes. 
  8. After the 5 minutes is up, let the cake cool for 30 minutes and enjoy with your favourite cream or custard!

Welcome again Little ones! How are you today? I feel the autumn hitting, the leaves are turning and I love it. I've been having a relaxing day today, it was also my Mothers Birthday! She was ever so happy with what I bought her :). Other than spending time with her I thought that it was about time to experiment in the kitchen and make another vegan recipe! So here it is ladies and gents! Get in that kitchen and start cooking!

INGREDIENTS:

  • 200 grams self-raising flour;
  • salt;
  • 50 grams caster sugar;
  • 50 grams coconut oil (put in the fridge before use, this is your butter subsistence);
  • 15ml almond milk;
  • 25 grams frozen raspberries.

STEPS ON HOW TO MAKE THIS:

  1. Preheat the oven to 180 degrees;
  2. prepare baking tray: brush on vegetable oil onto a baking pan and place over grease-proof paper, this is where you will place your cakes later;
  3. Sift the flour and pinch of salt into a large bowl;
  4. take the coconut oil out of the fridge, this should be solid enough to place into the flour, you should then rub the flour and coconut oil together until it forms fine breadcrumbs;
  5. put the caster sugar into the flour mixture and mix until well combined;
  6. put in the raspberries and mix until well combined, there should be a raspberry in every bite of the rock-cake;
  7. pour in the almond milk, stir until all the cake batter has joined together;
  8. take some of the mixture into your hands and place onto the baking sheet you prepared earlier. Make a circle, but do it imperfectly (as shown in the first picture), this makes it more authentic;
  9. repeat stage 8 until all the mixture has been used up;
  10. put into the oven for 15 minutes, you know they are done when the edges are golden brown;
  11. put onto a plate and ENJOY! :D 

WHY THESE INGREDIENTS? 

Raspberry:
Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Coconut oil:
Coconut oil high in natural saturated fats. Saturated fats not only increase the healthy cholesterol (known as HDL) in your body, but also help to convert the LDL “bad” cholesterol into good cholesterols. So if you are on a high fat diet, try coconut oil instead, it will benefit your heart at the end of the day.

Good evening! Yes I'm back again on the same day! It's been a few weeks that I've posted various blog posts on the same day; but I am so happy to finally be able to do this! The past few weeks have been really tough, I've been so miserable, I've been missing you guys most of all; your my little family; not talking to you as much has been heartbreaking :(.
This has been long overdue, but I have a VEGAN RECIPE UP AND RUNNING! AHHH! Sorry that you have had to wait this long, I just haven't had the time to get creative in the kitchen. I hope you enjoy this blog post! Lover you lots! :D

Ingredients:

  • 25 grams 100% dark chocolate;
  • 3 tbs self raising flour;
  • 3tbs almond milk;
  • 1 banana;
  • icing sugar (optional)

STEPS ON HOW TO MAKE THIS:

  1. Chop the chocolate into pieces and place into a glass bowl. Fill a medium pan with boiling water (boil the water before hand), turn the hob onto setting 1-2 and leave to simmer. Stir until melted;
  2. add the almond milk and stir into the chocolate until it's one colour;
  3. pick your desired mug (I made these measurements perfect for the mug I was baking in), pour the chocolate mixture into the mug and add the self-raising flour, stir until there are no lumps;
  4. mash the banana up with a folk , or blend it and add it to the cake mixture, stir until fully combined;
  5. put in the microwave for 2 minutes;
  6. tip the mug upside down, and sprinkle icing sugar (optional);
  7. ENJOY! :D

Why these ingredients? 

Banana:
Banana's are filled with potassium, this mineral helps function and repair: cells, tissue and muscle within the body. It also makes you feel more energised by sending electrolyte (an element which sends electricity around the body); along with sodium etc. 

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Vegan Recipe

Blueberry and blackberry vegan pancakes

GOOD MORNING! I've had a great couple of days talking to some of you! My Twitter has been blowing up, I'm so delighted and overwhelmed with joy that you are taking time out of your day to not only read my posts; but to talk to me as well! I know today is meant to be my day off; but I couldn't not share this!

Ingredients:

  • 100 grams self-raising flour;
  • 100 ml almond milk;
  • 10 grams blueberries;
  • 10 grams blackberries;
  • 2tbs olive oil
  • salt;
  • golden syrup (optional).

STEPS ON HOW TO MAKE THIS:

  1. Put your pan on a low heat (setting 2-3); this ensures that when you've made the batter the pan would heat up enough. You don't want a high setting as it will burn the surface and leave the inside raw;
  2. sift the flour into a bowl and add a sprinkle of salt;
  3. pour in the almond milk and mixed till combined;
  4. add the oil and mix until the mixture is elastic; 
  5. add the blackberries and blueberries, take a fork and crush them into the mixture; this method ensures that you will have tiny blueberry and blackberry pieces in your pancake;
  6. spoon in a small or large amount of mixture (depends how big you want your pancakes); and place them into the center of the pan;
  7. put a tiny amount of oil on the pan before hand, don't want them to stick;
  8. cook one side for two minutes, flip over and cook the other side for two minutes;
  9. repeat this process until you have no mixture left;
  10. put your extra toppings on the side, this would be the extra fruit and golden syrup for me;
  11. ENJOY! :D

Why these ingredients?

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Blueberries:
The blueberry's fiber, potassium, folate, and vitamin C coupled with its lack of cholesterol, all support heart health. The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease this is perfect if heart disease runs in the family.

Blackberries:

Much like spinach, raisins, apples, plums and grapes, blackberries are rich in bioflavonoids and Vitamin C. This is perfect for the skin, it replaces new cells, as well as keeping the skin firm and soft.
