Vegan recipe-raspberry rock-cakes

Welcome again Little ones! How are you today? I feel the autumn hitting, the leaves are turning and I love it. I've been having a relaxing day today, it was also my Mothers Birthday! She was ever so happy with what I bought her :). Other than spending time with her I thought that it was about time to experiment in the kitchen and make another vegan recipe! So here it is ladies and gents! Get in that kitchen and start cooking!

INGREDIENTS:

  • 200 grams self-raising flour;
  • salt;
  • 50 grams caster sugar;
  • 50 grams coconut oil (put in the fridge before use, this is your butter subsistence);
  • 15ml almond milk;
  • 25 grams frozen raspberries.

STEPS ON HOW TO MAKE THIS:

  1. Preheat the oven to 180 degrees;
  2. prepare baking tray: brush on vegetable oil onto a baking pan and place over grease-proof paper, this is where you will place your cakes later;
  3. Sift the flour and pinch of salt into a large bowl;
  4. take the coconut oil out of the fridge, this should be solid enough to place into the flour, you should then rub the flour and coconut oil together until it forms fine breadcrumbs;
  5. put the caster sugar into the flour mixture and mix until well combined;
  6. put in the raspberries and mix until well combined, there should be a raspberry in every bite of the rock-cake;
  7. pour in the almond milk, stir until all the cake batter has joined together;
  8. take some of the mixture into your hands and place onto the baking sheet you prepared earlier. Make a circle, but do it imperfectly (as shown in the first picture), this makes it more authentic;
  9. repeat stage 8 until all the mixture has been used up;
  10. put into the oven for 15 minutes, you know they are done when the edges are golden brown;
  11. put onto a plate and ENJOY! :D 

WHY THESE INGREDIENTS? 

Raspberry:
Raspberries is one of the greatest antioxidant foods, it cleanses the body and makes you feel great inside. As well as being super delicious, raspberries can also prevent cancer, science studies have shown this.

Almond milk:
Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Coconut oil:
Coconut oil high in natural saturated fats. Saturated fats not only increase the healthy cholesterol (known as HDL) in your body, but also help to convert the LDL “bad” cholesterol into good cholesterols. So if you are on a high fat diet, try coconut oil instead, it will benefit your heart at the end of the day.

Good morning Little ones! How are you feeling today? I've created a new breakfast recipe that I hope you enjoy as much as me :).

I have an exciting day ahead of me, my family are getting together and holding a summer BBQ! We have this 2-3 times a year; but only in the summer! I've been waiting for this and I can't wait! I will be writing a blog post on this, I might even vlog!

Ingredients:

  • 20 grams of red and green grapes;
  • 1 clementine;
  • 25 grams of vegan yogurt, I used Alpro mixed berries;
  • 15 grams of granola,I used Rude Health.

STEPS ON HOW TO MAKE THIS:

  1. Prepare all fruit! Wash the red and green grapes and put them to one side. Peal and segregate the clementine segments and put with the grapes;
  2. grab a bowl of your choice and pour your chosen granola at the bottom;
  3. place the yogurt on top of the granola layer;
  4. place the fruit on top;
  5. ENJOY! :D 

Why these ingredients? 

Grapes:
Grapes contain powerful antioxidants known as polyphenols, which may slow or prevent many types of cancer, including esophageal, lung and mouth. Antioxidants fight infections and improve your immune system. They are also super tasty and replace all the naughty treats. 

Clementines:

Clementines are juicy delights rich in variety of vital nutrients including minerals such as calciummagnesiumpotassium. This is perfect food for your teeth and bones; calcium repairs and strengthens them, so when you get older your bones won't be brittle. Clementines are also filled with vitamins C, which is perfect for the skin, it hydrates, repairs and tightens the skin.

Hello and welcome! How are you today? Sorry for being so late in posting this, but I had to attend a LAN meeting at my future university in September :).
I know these recipes are your favourite, so I gave you what you wanted, and that's another vegan smoothie! :D 
This is my favourite creation of mine yet! The sweetness of the apricots and the syrup combined is mouthwatering! If you want to find out out to make this tropical concoction; have a little read below :).

 Ingredients:

  • 3 apricots;
  • 200 ml;
  • 1 tbs of golden syrup.

STEPS ON HOW TO MAKE THIS:

  1. Prepare the fruit; wash the apricots, cut them in half and then into quarters. After this is done place them into the blender of your choice;
  2. add the almond milk and the golden syrup;
  3. blend this fruity goodness for 3 minutes. You don't have to do it for this long, but that's because I like a smooth smoothie with no bits.
  4. ENJOY! :D

Why these ingredients?

Almond milk is filled with potassium, this helps prepare and enhance: cells, tissue and organs in the human body. This is essential in everyday life, you always need to repair yourself.

Apricots:
Apricots are filled with vitamins A and C. Vitamins C is fantastic for the skin, it's proven to reduce wrinkles for tightening the skin, as well as making it smooth and refreshing; this is the main ingredients they put in all skincare brands. Whereas vitamin A plays a vital role in bone growth, reproduction and immune system health.

Vegan Recipe

Blueberry and blackberry vegan pancakes

GOOD MORNING! I've had a great couple of days talking to some of you! My Twitter has been blowing up, I'm so delighted and overwhelmed with joy that you are taking time out of your day to not only read my posts; but to talk to me as well! I know today is meant to be my day off; but I couldn't not share this!

Ingredients:

  • 100 grams self-raising flour;
  • 100 ml almond milk;
  • 10 grams blueberries;
  • 10 grams blackberries;
  • 2tbs olive oil
  • salt;
  • golden syrup (optional).

STEPS ON HOW TO MAKE THIS:

  1. Put your pan on a low heat (setting 2-3); this ensures that when you've made the batter the pan would heat up enough. You don't want a high setting as it will burn the surface and leave the inside raw;
  2. sift the flour into a bowl and add a sprinkle of salt;
  3. pour in the almond milk and mixed till combined;
  4. add the oil and mix until the mixture is elastic; 
  5. add the blackberries and blueberries, take a fork and crush them into the mixture; this method ensures that you will have tiny blueberry and blackberry pieces in your pancake;
  6. spoon in a small or large amount of mixture (depends how big you want your pancakes); and place them into the center of the pan;
  7. put a tiny amount of oil on the pan before hand, don't want them to stick;
  8. cook one side for two minutes, flip over and cook the other side for two minutes;
  9. repeat this process until you have no mixture left;
  10. put your extra toppings on the side, this would be the extra fruit and golden syrup for me;
  11. ENJOY! :D

Blueberries:
The blueberry's fiber, potassium, folate, and vitamin C coupled with its lack of cholesterol, all support heart health. The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease this is perfect if heart disease runs in the family.

Blackberries:

Much like spinach, raisins, apples, plums and grapes, blackberries are rich in bioflavonoids and Vitamin C. This is perfect for the skin, it replaces new cells, as well as keeping the skin firm and soft.

Vegan Recipe

Watermelon, orange and yogurt smoothie

Good afternoon! Change of plans, but I thought that I would give you another vegan recipe! I love experimenting with different fruits; and I'm always in the mood for a good old smoothie! So I decided to share my creation with you!

Ingredients:

  • 1 watermelon;
  • 25ml orange juice;
  • 25 grams vegan yogurt, (I used alpro raspberry).

STEPS ON HOW TO MAKE THIS:

  1. Prepare your fruit: cut the watermelon in half, and half again; this makes quarters, ( as shown in the pictures above). After you have done this, slice the quarters so that they are in strips. Cut around the melon and the skin so you are left with the red flesh. Cut these into cubes;
  2. put the watermelon into the blender and add the orange and the yogurt;
  3. blend for a few seconds, because watermelon is a water based fruit the smoothie won't be lumpy;
  4. ENJOY! :D 

Why these ingredients?

Watermelon:
Watermelon's are filled with vitamins A, B6 and C, and is also an amazing antioxidant. Vitamin C is amazing for the skin, it replenishes the several layers of skin, as well as keeping it hydrated and firm. Vitamin C is common in skin care brands, as it has a multitude of benefits for the skin. As well as this, watermelon also fights infections and builds the immune system. 

Orange:
Oranges are an excellent source of vitamin C. They are also a very good source of dietary fiber. Just like the watermelon, oranges are great for the skin. When I make a facial mask oranges are my go to ingredient; not only do they smell great; but they feel fantastic on the skin; it makes me feel awake.

Vegan Recipe

Fruit Salad

Good evening! I posted a picture on Twitter of my breakfast fruit salad and you really seemed to like it! So I thought that I would show you how I made it and what fruits I decided to throw together :).

Ingredients:

  • 50 grams, red and green grapes, (25 grams each);
  • handful of cherries;
  • 1 pink lady apple;
  • 25 grams strawberries, (when making this concoction I ate most of the strawberries).

STEPS ON HOW TO MAKE THIS:

  1. Prepare your fruit,wash all the fruit in a sift;
  2. place the grapes and cherries into your bowl of choice;
  3. cut the top off the strawberries and place this into the bowl when done;
  4. cut the apple in half, and half again, repeat this process until you are happy with the shape of your apple. I cut it into strips as I find it easier to eat this way.
  5. ENJOY! :D 

Why these ingredients?

Cherries:

Cherries contain powerful antioxidants like anthocyanins and cyanidin, these components build the immune system, and also detox your body from any unwanted bacteria, as well as making your healthier

Grape, clementine and strawberry smoothie

Good afternoon! I thought I would whip together another smoothie recipe, I know how much you love these recipes. They are so fun and easy to make, and also tastes delicious. 
How has your day been so far? I know that I've been hunting high and low for a pair of jeans for my new workplace :').

Ingredients:

  • 50 grams grapes (red and green);
  • 1 clementine;
  • 25 grams strawberries;
  • 25ml fresh orange juice, (I used innocent orange juice).

STEPS ON HOW TO MAKE THIS:

  1. Prepare your fruit. Wash all your fruit, cut the top of the strawberries off, and peal the clementine;
  2. put the fruit into the blender, I used the BlenActive Blender; 
  3. add the fresh orange juice;
  4. blend until your desired texture, I blended for 2 minutes and this made it super smooth;
  5. ENJOY! :D 

Why these ingredients?

Vegan Recipe

Strawberry pancake recipe: 

Good morning everyone! How are you feeling today? I'm up and early to give you another new recipe! You can have these piles of fun for breakfast! They are filling and long lasting. If you want to look on how to make these tasty treats, look below and follow my simple steps :).

Ingredients:

  • 100 grams self-raising flour;
  • 100 ml almond milk;
  • 8 strawberries and (extra for decoration-optional);
  • 2tbs olive oil
  • salt;
  • golden syrup (optional).
Top tip: The strawberries have a very high water content, when you mix them in with the batter in thins it out. Also when you cut into them they are gooey; but it's only the strawberries excess water coming through.  

STEPS ON HOW TO MAKE THIS:

Vegan Smoothie Recipe

Peach, strawberry, raspberry and orange juice smoothie:

Hello lovely people! How are yo doing today? I have another smoothie recipe for you! You really seem to enjoy them, and I love making them for you :).
If you want to know how to make this tropical concoction, look below and follow the few easy steps.






Ingredients:

  • One peach;
  • 10 raspberries;
  • 10 strawberries;
  • 300ml fresh orange juice
When making this smoothie make sure you increase the amount of ingredients if you want it to serve more people. Always make sure to place a lot of liquid in the blender so it doesn't get stuck or clumpy. 

STEPS ON HOW TO MAKE THIS:

  1. Prepare all your fruit, to do this you want to cut your: peach into quarters, make sure you are safe as there is a huge pip in the middle. You also want to cut the top of the strawberries off, (you don't have to, but I do); and just wash your raspberries;
  2. Place all your fruit into your blender of choice, I'm using the Breville pick&mix jug blender, if you want to see my review on this click here;
  3. Pour the orange juice slowly into the blender (don't want to make a mess now);
  4. pulse your fruit to begin with, (if you don't have a pulse setting, make sure you blend it slowly, press the button then stop, then press again). This is because the peach has thick skin, you want to make sure your smoothie is not bumpy;
  5. put your blender on a higher setting and blend for a straight minute; 
  6. Pour into a glass and ENJOY! :D 

Why these ingredients? 

Strawberries:
A strawberry is an excellent antioxidant, this means that they are the first call when it comes to fighting diseases in the body; they also prevent causing other damage to other cells. Strawberries also donate electrons to unstable free radicals. This means that they don't have to take electrons from innocent cells.

Raspberries:
Raspberries are great for the brain, for example; it decreases the delay in cognitive ability related to aging. As well as this, raspberries are enriched with potassium, this helps repair and build: organs, cells and tissue.

Peach:
Peaches are enriched with vitamin C, this is great for the skin and is used in many skincare brands, especially in anti-ageing as it helps reduce wrinkles. It also hydrates the skin, so if you have dry skin like me, you can make a peach mask to enhance your natural oils.

Hello Little ones! Hope you are well and having a good day, I have another smoothie recipe for you! I hope you enjoy it; this is the perfect start of the day meal; if you are in a rush you can drink this on the go and still feel full and energised :).

If you want to make this yummy smoothie look at the simple steps down below :). 





Ingredients:

  • 1 banana; 
  • 5 strawberries; 
  • 25grams oats;
  • 50grams alpro almond milk
These are just the measurements I used to make a small smoothie, it filled half of the 600 ml bottle. You can double the ingredients if you want to; this is just what I wanted to do. Also a tip when blending, make sure you blend for 2-3 minutes for a smooth texture; because the oats are hard you want to make sure that they are smooth at the end. If you like bits in your drink, or don't mind textures then you don't have to do this:). 

STEPS ON HOW TO MAKE THIS: 

  1. Cut up your strawberries and banana and place them in the blender; 
  2. pour the oats into the blender slowly (so that you don't make a mess);
  3. slowly pour the almond milk into the blender;
  4. BLEND;
  5. optional step: scatter oats onto your smoothie for extra crunch;
  6. ENJOY! :D

Why these ingredients? 

Banana:
Banana's are filled with potassium, this mineral helps function and repair: cells, tissue and muscle within the body. It also makes you feel more energised by sending electrolyte (an element which sends electricity around the body); along with sodium etc. 

Strawberries:
A strawberry is an excellent antioxidant, this means that they are the first call when it comes to fighting diseases in the body; they also prevent causing other damage to other cells. Strawberries also donate electrons to unstable free radicals. This means that they don't have to take electrons from innocent cells. 

Oats:
Oats have a slow release level of energy, this means that you can have these for breakfast and last a long time without food. This is handy if you are on a diet and want to loose weight; as you won't get hungry as often throughout the day.
